What's the difference
between organic flavor
extracts and organic flavor
concentrates?
The organic flavor extracts
are made in a base of organic
alcohol and are not as heat
stable. They are best used in
clear beverage applications
and also in dairy
products.
Alcohol-based flavor extracts
tend to be more soluble in
high fat formulations and that
may be why they are found in
some baking and always in
dairy applications. They
easily disperse in water-based
formulations and the flavor
also tends to be a little
brighter.
The organic flavor
concentrates are made in a
base of organic gum acacia.
They are much more heat stable
but can also be used in ice
cream and beverage
applications. Aside from the
fact that the organic flavor
extracts don't like the high
baking temperatures, they are
very versatile and give the
flavor a lot of lift when used
in beverages and frozen
desserts.
